Chicken Quesadillas

Quesadillas are very versatile. They can be used as a side or a main dish. Although the following is a fairly basic recipe, it is easy to add your own twist. You can substitute different meat, various cheeses, or add onions and bell peppers.

2 boneless, skinless chicken thighs (about 1/2 lb.)

2 flour tortillas

1/2 cup sliced Asadero (or your favorite cheese)

1 lemon

finely chopped cilantro

salt

Tony's or other cajun seasoning

Brine chicken in salted water with juice of half a lemon.

Rub chicken with Tony's and place on grill. In general chicken should cook 7-10 minutes on either side, but this depends a great deal on the size of the pieces of chicken. Cut chicken into bite size pieces. Place 1 flour tortilla on a plate. Top with sliced cheese leaving 1" border. Place chicken on top of cheese and sprinkle with cilantro. Squeeze 1/4 lemon over chicken.

Place other tortilla on top.

Grill quesadilla 4 minutes on either side, or until cheese is melted. Cut into quarters and serve.
